Dip-tacular!!

If there is one thing people know about me, is how much I LOVE dips and appetizers! I saw this on Kelly's blog and had to join in on her friend Sophie's link-up! 


This dip looks amazing! I haven't tried it yet, but I am this weekend! I already found so many other dips that I can't wait to try.


Batter Dips (I found this on the one and only---Pinterest)
AND THEY ARE SAFE TO EAT!

Safe-to-Eat Chocolate Chip Cookie Dough

Recipe by: Adapted from Family Fun Magazine
Yields: about 1 1/2-2 cups cookie dough

Ingredients:
1/2 cup butter, softened
3/4 cup light brown sugar, packed
1 cup all-purpose flour
1/2 teaspoon salt
1 tablespoon vanilla extract
1 cup semisweet chocolate chips
4 to 6 tablespoons water

Directions:
In a medium bowl, cream together the butter and sugar. Stir in the flour, salt, vanilla and chocolate chips. Add the water one tablespoon at a time stirring between each, until the dough reaches cookie dough consistency.

Safe-to-Eat Sugar Cookie Dough
1 1/3 cups and 1 tablespoon all-purpose flour
1/2 cup butter, softened
3/4 cup white sugar
1-2 tablespoons water
1/2 teaspoon vanilla extract

Directions:
In a medium bowl, cream together butter and sugar for 2-3 minutes until light, fluffy, and pale yellow. Mix in flour and vanilla. Add water one tablespoon at a time, mixing after each, until you reach cookie dough consistency.

Safe-to-Eat Cake Batter Cookie Dough
1 1/2 cups all-purpose flour
2/3 cup yellow cake mix
1/4 teaspoon salt
1/2 cup unsalted butter, room temperature
1/2 cup granulated white sugar
1 teaspoon pure vanilla extract
2 tablespoons sprinkles
4-8 tablespoons water

Directions:
In a medium bowl, cream together butter and sugar for 2-3 minutes until light, fluffy, and pale yellow. Mix in salt, flour, cake mix, sprinkles, and vanilla. Add water one tablespoon at a time, mixing after each, until you reach cookie dough consistency.


You can then eat it with animal crackers, vanialla waffers, or anything else you find that taste good with it! :)

My slight obsession...

I am very anal, particular, strict (whatever you wanna call it) when it comes about the type of assignment notebook I have for college.

I cannot function throughout the day unless I know everything I have to do, where I have to be at certain times and other important things each week. So, needless to say, I am very anal about the type of planner I need.

I want one that has hourly slots, it has to have one week cover 2 pages, and at the bottom of each day I want like a "to-do/notes" section for homework, notes and things I need to do. I need help in choosing one. I've recently learned about Erin Condren and love her planners. But they break up the time of days. Can anyone give me a few ideas or suggestions? I've been looking at Franklin Planners but not sold yet.


Any suggestions??

Celiac, Lactose intolerant, Crohns?

I am a basket case. I should say my body is a basket case. Let me start from the beginning and hopefully make it shorter than it really is.

A little over a year ago, I started having severe lower abdominal and pelvic pain. It would be so bad that I would have to stop whatever I'm doing and hurl over in the fetal position because the pain was so intense. (Now, I am pretty confident that I have a high pain tolerance---I did gymnastics, softball, diving, among others, I've been hurt so much, it doesn't phase me.) So, a year ago, I went to my doctor and she had me get an oral and IV contrast on my lower torso. Everything came back fine other than slightly enlarged kidneys. The only prescription I had was to try adding probiotics to my diet daily.

Fast forward a year later. I'm back at the doctor with the same, consistent, brutal pains. I told her that I have been feeling full a lot faster, I'm still having to go to the bathroom almost immediately after my sharp pains and that they're more intense than they were a year ago. She told me she is concerned. She also told me that I could possibly have IBS (irritable bowel syndrome), celiac disease, or ovarian cancer. My thoughts: "Sweet doc, you say this so nonchalantly and cancer could be eating away at my baby machines."


The next step she told me to do: take a different probiotic twice a day, start taking dicyclomine when the pains won't subside, get 5 different blood tests done, another gross test and go see a gastro ASAP.

So...that's exactly what I did. He told me pretty much the same things and then even more! He ordered more blood work and told me he wanted to schedule some sort of device that goes into my stomach and takes some biopsy's, because there is a possibility I COULD i hope not have crohn's disease. He's advice to me until I get this procedure done....no dairy for TWO WEEKS.... I REPEAT NO DAIRY FOR 2 WEEKS! For those who don't know me; to say I LOVE ice cream is an understatement. I can eat it everyday if I could. I also love milk, cheese and ANYTHING dairy. It's killing me! I CAN'T EVEN HAVE PIZZA!!!

Now, his reasoning for no dairy is to see if it helps my stomach settle down. He also thinks I could be lactose intolerant. GREAT!! I'm allergic to my favorite food group :::tear:::

Tonight my family ordered chinese food for dinner, which is the first meal, since I've been to the gastro, that I actually got full!

Do any of my fellow blog friends had or have any of these dietary problems? I need help on what to eat, what I can and CAN'T eat.

Needless to say, I can't wait for this 2 week dairy free trail to end.

This isn't my dog, but doesn't he just make you smile??

Sooo...

I'm back from vacation!!


Before I say anything---welcome the new member of our family. Tio!! and yes he is on my bed and I'm completely ok with that!! He is a morning pup, which is perfect for me! We love to snuggle and take naps on my bed.


I'm back. Actually, I've been back since Monday. I had to go straight back to work Tuesday morning :/ Tuesday afternoon I had a doctors appointment. Long story short about that---I may have celiac disease or IBS. Not good, but I'm going to get blood work done, more doc apt and ultrasounds. Hopefully, everything is ok---this will be another post.

My trip to the Dominican Republic was amazing!! So fun, relaxing and much needed!! There are more pictures than words here.
